It is on the banks of the Alqueva, where the view sweeps over the undulating hills of the Alentejo and the Spanish Extremadura that Terramay (mother earth) is born.

 

Founded with the aim of promoting the importance of soil health, food awareness and the fight against desertification, we produce food with high quality standards, ensuring respect for all elements of nature.

 

We offer all who visit us the opportunity to reconnect with nature and be part of a community that takes care of the landscape, fauna and flora in a sustainable way.

OUR
STORY

Thomas Sterchi and the Brito family, linked for several years by friendship and professional partnership, share a vision:

 

Transform a regenerative agriculture and sustainable tourism project into a unique experience and fight against desertification.

 

After numerous trips through the south of Portugal, on November 15, 2018, the 562-hectare property on the banks of the Alqueva was acquired and Terramay was born.

 

Terramay means Mother Earth and is the home and livelihood of our horses, cows, pigs, goats, sheep, chickens and bees.

 

Animal welfare and respect for mother nature is the basis of our work!

OUR CONCEPT

In our Permaculture garden, fruits and vegetables grow naturally: no genetically manipulated seeds, no pesticides, herbicides or chemicals involved. On the farm, we use only practices that combat desertification and aim to revitalize eroded soils and adapt wildlife to the new climate reality:

By constantly improving our pastures, soil biodiversity, and restoring water resources, we are able to sequester greater amounts of carbon dioxide from the atmosphere.

It is very important to us to create a healthy and safe working environment and to allow our animals to grow freely, without antibiotics and other chemicals.

OUR 
GARDEN

Our vegetables are grown from selected seeds and without genetic manipulation.

Authentic, unique in flavor and dense in nutrients and vitamins, directly from our garden, to your table.

 

PANTRY

What is not sold fresh, is cooked, refined, and processed. Whether it is juices, pesto, pickles, chutneys or jams, we create vintage and limited editions of seasonal preserves. These products are handcrafted in our Atelier and have culinary inspiration from renowned chefs.

 

EXTRA VIRGIN OLIVE OIL

Extra Virgin Olive Oil from 100% Galega Olives, handpicked, cold extracted by mechanical processes, with 0.2% acidity, which is harmonious, fruity, ripe and slightly spicy.

 

MULTIFLORAL HONEY

From our bees, treated 100% naturally, the flavor is unique and with all the properties that this superfood offers.

OUR ANIMALS

ACORN-FED BLACK PIG

Bred in their natural habitat and fed only on grass and acorns in our montado. The meat of our pigs has the unique flavor of the traditional Alentejo table.

 

 

PASTURE MERTOLENGA

Our Mertolenga cows roam freely all year round, being fed only on grass from our pastures and the result is a tender meat, with little fat, rich in vitamins and minerals.

 

 

MERINO SHEEP

Our sheep graze freely on the farm and regenerate our soils. They produce delicious meat and their soft wool serves us in many ways on the farm.

 

 

SERPENTINE GOATS

An indigenous species, characterized by its cunning and robustness produces a high quality meat and milk for our cheese that has an incomparable flavor.

 

 

PASTURE HEN EGGS

With strong color and intense flavor, our free-range chickens, fed exclusively on grass and grain produced by us.

RAYA - FROM THE FARM TO THE BEACH

Micro-seasonal, organic, and local.

This is the concept of our restaurant Raya. Located on the beautiful beach of Azenhas d'El Rei on the Portuguese shores of the great Alqueva lake.

 

"Pick, Clean, Serve"

We work exclusively with seasonal ingredients that nature offers us. Our menu changes, as such, daily.

 

What is picked on the farm in the morning is served here at lunchtime.

 

All meals are freshly cooked, and we strive to make them tasty, healthy, and environmentally friendly!
